I recall that the brew went very well. Hit strike temp and kept it for an hour, hit expected OG very closely, no issues.
Let it sit for a long time, 1.5 - 2 months in primary, before bottling. Got 57 12oz bottles.
Let bottles prime for a month.
Tasting Notes:
BIG HIT! Everyone loves it.
Malty up front, followed by strong honey flavor and mouth coating. High alcohol content is not at all noticeable. Big body and heavy sweetness make it hard to consume in quantity (probably for the best).
Brewday Notes (second attempt 10/20/2012):
6 lbs (eyeballed from 12lbs container) Wildflower Honey from eBeeHoney.
2L starter. Smack pack grew for 5 hours, then added to 1L DME starter. Shook a few times, left overnight. Krausen fell during the night. Next day added another 1L DME starter. Put on stir plate. Very high activity, overflowed a bit, turned off stir plate.
Heated 8.6 gallons water to 160F.
Strike temp: 150F – too low. Heated up, target 154F, overshot to 160F. Let it drift down over 10 minutes with lid off. Held at about 157F for the hour.
Iodine test clear at 50 mins, but mashed for 70 min.
1 tsp yeast nutrient at 10 min.
1/4 tablet whirlfloc at 10 min.
OG low: 1.074
66F for first 2 days, then 64F.
